Bespoke Gluten Free Sausage Mix

When one of the oldest and largest independent family-owned butchers in the country decided to create its own Gluten Free Cumberland Sausage, it immediately turned to The Dalesman Group for assistance.

The brief was to create a ‘proper northern sausage’ full of traditional flavour that could be sold as a breakfast sausage to hotel customers. It also had to be gluten free and a complete mix for ease of use.

The NPD team worked on three gluten free mixes for the customers’ taste panel, each were then blind tasted against several competitors. The feedback was excellent with the Dalesman products coming out on top. The preferred recipe was then adjusted slightly for taste and texture before being approved. After a full production trial, ongoing orders were placed.
